For a while now I’ve been meaning to post more recipes on the blog. This is not because I am a budding Master Chef. Far from it! I just really want all my fave recipes in one spot plus, you never know, it also might inspire me to get a little more creative in my culinary endeavours!

So when Gourmet Garden’s  Blog off/Cook off crossed my radar I thought it would be a good opportunity to get cooking on my plan! (ok, lame joke, I know)

I love the taste of fresh herbs as mum has always had a herb garden. Unfortunately, I have a notoriously black thumb so it wasn’t until The Man built our veggie gardens that I have had my own fresh herbs to cook with. We’ve had lots of success with basil, parsley, ginger, garlic, chives and chilies. We’ve also had thyme, mint, rosemary and oregano.

Unfortunately, The Man, being a MAN can be a little indiscriminate when it comes to pruning or deciding what’s taking up too much room in his beloved garden. Often, I’ll go to pick a herb only to find its fallen victim to the secateurs and has been reduced to a clump of twigs, if it’s still there at all! Yay for Gourmet Garden in the fridge ;)

The destination for most fresh herbs around my place is in Italian dishes, because the kids love anything pasta. So to kick things off, I’m sharing one of my favourite standby meals. It doesn’t get any simpler than this but I can guarantee there won’t be any arguments at dinner time!

Easy Peasy Pasta Pillows  (Ravioli with Tomato & Herb Sauce)

1 packet of fresh ravioli

1 tin of diced tomatoes

1 cup of passata (tomato puree)

1 tbsp Gourmet Garden Garlic

1 tbsp Gourmet Garden Basil

1 diced shallot (optional)

1 cup of sliced mushrooms (optional)

 

1. Cook the ravioli according to packet instructions. Drain & set aside.

2. If using, sauté shallots and mushrooms in a small amount of oil.

3. Lower heat then add tinned tomatoes & passata to the saucepan.

4. Stir in basil & garlic.

5. Return ravioli to pan to heat through.

6. Serve sprinkled with cheese and some piping hot garlic bread.

7. Enjoy a whinge free dinner!

Note: You can also add diced bacon or even spice it up by stirring through some Gourmet Garden Hot Chilli after you’ve taken out the kids’ serves.
